Our arrowroot is 100% pure and never mixed with potato starch. Arrowroot has a very neutral flavor and aroma, more so than cornstarch, so it is perfect for thickening sauces or jellies. It will not make your sauce cloudy like other thickening agents tend to. In recipes, two teaspoons of arrowroot can be substituted for one tablespoon of cornstarch.
